This summery recipe is delicious and refreshing. Make sure your melon is nice and ripe to get the full flavors. I like using cantaloupe but any ripe melon will do! Serve with Bokisch Garnacha Blanca or Trencadis White Blend!
Ingredients
- ¼ ripe cantaloupe
- 3 slices prosciutto
- ¼ Red onion
- Fresh mint leaves
- Bokisch Extra Virgin Olive Oil
Instructions
- Cut the prosciutto into bits and fry until crispy in olive oil. Let drain and cool.
- Shave the cantaloupe into thin strips with a peeler, sharp knife or mandolin.
- Stack like ribbon on a platter.
- Thinly slice the red onion and arrange in between with slices with the fresh mint.
- Sprinkle the crispy prosciutto on top.
- Drizzle with delicious Bokisch olive oil from Terra Alta Vineyards
- Salt and Pepper to taste.
I just used a potato peeler for my melon and it worked just fine!
