This recipe is inspired by my son, Anton and his time working at Alebrijes Mexican Bistro. We love to create seasonal guacamole with peaches, watermelon and pomegranate. Don't forget to serve it with one of our many Bokisch Sangria recipes.
Ingredients
- 4 ripe avocados
- 2 jalapeños (minced)
- 2 limes
- 2 tsp cumin
- sea salt
- 1 peach (chopped)
- 1 handful fresh cilantro (diced)
- ¼ cup chopped red onion
- Cotija cheese
Instructions
- Put the diced jalapeños and lime juice in a "mocajete" or bowl and mash into a paste.
- Add the avocados and mash with two forks.
- Mix in the onion, cilantro and cumin.
- Add salt to taste.
- Gently fold in the peaches.
- Sprinkle with grated cotija cheese.
- Serve with chips and Bokisch Sangria.
Notes
To adjust spiciness, add more of the white ribs and seeds of the jalapeños!
Use a Mocajete to mash the jalapeños and lime juice.
