When I was a kid we lived out in the country and my mom often had to get creative with what was in the pantry. One day she made us tuna tacos! I have to admit, we were skeptical at first, but one bite and we demanded more! It’s a perfect recipe for pantry diving. You’ll be surprised how good it is! Trust me on this!

Ingredients
- one can tuna (whole chunk,drained)
- 2 stalks celery (chopped)
- 2-3 Tbsp mayonnaise
- 1-2 tsps cumin (optional)
- Corn tortillas
- Vegetable oil
- 6 Romaine lettuce leaves
- 1 tomato (sliced)
- 1 lemon (cut into slices)
Instructions
- Make your tuna according to your taste. Drain the tuna, mix with mayonnaise, chopped celery and cumin.
- Fry the corn tortillas in vegetable, form into a taco shell, let drain on paper towels.
- Stuff the corn tortillas with the tuna, add sliced tomatoes and a lettuce leaf.
- Serve with a lemon slice to squeeze on top.

This is a pantry friendly recipe and a nice change from the classic tuna sandwich!
