Samfaina is one of the most popular summer Catalan dishes due to it's abundant use of peppers, zuchinni and eggplant. It is very similar to French Ratatouille. I love making a big batch of this to use as a side dish with chicken, fish or serve on a toasted baguette!

Serves: 4
Ingredients
4 garlic cloves
1 large eggplant
4 red bell peppers
2 zuchinni
2 onions
6 tomatoes
¼ cup extra virgin olive oil
Sea Salt
Instructions
Chop, mince, cut all the veggies.
Sautee the onion, garlic, eggplant and zuchinni in the olive oil.
Once this has cooked down (do not caramelize) add the peppers and tomatoes.
Add more olive oil as needed.
Continue to cook on low heat, stirring as needed or covered.
Add sea salt to taste and a sprinkling of fresh basil or thyme upon serving.
Notes
The recipe can be modified to fit your garden. Add more eggplant, less peppers, however you prefer! Also, don't skimp on the olive oil. It is a key ingredient to the flavors!
