  • 6 eggs
  • 1 yellow onion
  • 2 cups regular olive oil (approximately)
  • 2 tsp sea salt
Instructions
  1. Peel and slice the potatoes into approximately ¼ inch think rounds.
  2. Peel and dice the onion.
  3. Heat the olive oil in a stock pan.
  4. Cook the potatoes until soft (make sure there is enough olive oil to cover the potatoes)
  5. Add the onions and cook another 5 minutes.
  6. While the potatoes are cooking, whisk the eggs in a large bowl.
  7. Using a slotted spoon or spatula, remove the potato and eggs, let the extra oil drain over the stock pan and add to the eggs.
  8. Add the salt and stir the mixture together.
  9. Heat a tablespoon of the extra olive oil in a non stick pan.
  10. Add the potato and egg mixture to the pan and cook on low heat.
  11. When one side is cooked, flip it onto a plate and slide the uncooked side back into the pan.
  12. Cook another 5 minutes or so until the other side is done.
