Ingredients 1 Pound Fresh Halibut (cut into 1 inch cubes) 3 Shallots (sliced) 2 Garlic Cloves (sliced thin) 2 Calabrian Chiles (sliced thin)-can substitute other hot chile of your choice ½ Fennel Bulb (sliced thin) 3 Tbsp tomato paste 1 cup Albariño 1 tsp ground cumin 1 tsp ground coriander ½ cup seawater (or salted tap water) ¼ cup chopped parsley 1 Tbsp chopped oregano ¼ cup Extra Virgin Olive Oil Instructions Heat Olive Oil in skillet. Add shallots, fennel, chiles and garlic. Sauté 4 minutes until soft and lightly caramelized. Add tomato paste, cumin and coriander, sauté 1 minute, add the Albarino and cook for 2 minutes. Add the seawater and simmer on low for 6 minutes. Add the halibut and cook for 2 minutes until cooked through. Add parsley and oregano.
