This recipe was created by my mom, Jane. It is the most delicious thing you can ever imagine! Crispy fried Manchego cheese...hot and oozing with salty flavors. Need I say more? Indulge yourself, but don't forget this recipe requires a bold delicious Bokisch wine like our Liberty Oaks Tempranillo to wash it down!
Ingredients
- Manchego Cheese (cut into triangles)
- Egg
- Panko
- Flour
- Olive Oil
- Roasted Piquillo Peppers (optional)
Instructions
- Prepare 3 plates with flour, panko and egg.
- Pre-heat a frying pan or griddle to medium with olive oil.
- Dredge the cut Manchego wedges in flour, egg and panko.
- Fry until crispy on each side, turn over and then drain on a paper towel.
- Serve with slices of roasted piquillo peppers and sprinkle with sea salt.
- Garnish with parsley sprigs.
This is all you need! Good extra virgin olive oil, Manchego cheese, eggs, breadcrumbs (like Panko) and flour.
There is an art to cutting cheese, especially Manchego. You want to keep it in a triangle shape. This time, go ahead and cut off the rind so it doesn’t interfere with each delectable bite.
I like to add strips of roasted piquillo peppers (or bell peppers) to add color and to layer on top of the tapa.
