Chef Toni’s Carquinyolis or Biscotti December 5, 2010 by Webmaster Recipe: Toni’s Carquinyolis Summary: Carquinolis are what Catalans call a cookie that you may know as biscotti. Ingredients For batter: 1 cup + 3 tbsp (150 g) flour 1/2 cup (100 g) sugar 1 egg 1/2 lemon peel grated 1 tsp baking powder approximately 1 cup (100 g) of whole raw almonds, unpeeled For egg wash: 1 egg yolk mixed with a little water Instructions Mix all ingredients for batter except almonds. Add the almonds and make two loaves of about 2 inches wide (sprinkle counter with a flour to avoid sticking) Place in a baking tray on parchment paper and brush with egg wash. Bake in a preheated oven at 350 deg F (180 deg Celsius) about 25 min. Take the loaves out of the oven and let cool. Cut loaf into cookies with diagonal cuts of 1/2 inch thick. These cookies are great to serve with a glass of Garnacha for a chat by the fireside. Put the cookies back on the parchment paper and bake for 5 to 10 minutes at 320 deg F (160 deg Celsius) until they have a lightly browned coloring.
