This is one of the most favorite Catalan comfort foods! It makes a tasty and quick weeknight dinner. Serve with Bokisch Spanish wines such as Tempranillo, Monastrell or Graciano for a Catalan fiesta!
Ingredients
- 1 can white Cannellini beans
- 1 package of Catalan Butifarra Sausage (if unavailable, substitute Bockwurst)
- Allioili
- Parsley
Instructions
- Drain and warm the beans. Add ½ cup fresh water a bay leaf, whole garlic clove, extra virgin olive oil and sea salt to give give it a homemade taste. (Better yet, make your own in the pressure cooker or the night before!)
- Cook the sausage on the grill or on a frying pan.
- Serve with chopped parsely, drizzle of olive oil and allioli.
Notes
Making allioli is always worth the effort! It can keep for a few days and is delicious served on crusty French bread as an accompaniment.
You can buy imported Catalan sausage and several on line locations. La Espanola Meats, The Spanish Table and Tienda.com are some of my “go to”s!
I love making homemade white beans, but the canned beans can be enhanced for flavor with a bay leaf, garlic clove and extra virgin olive oil! (Drain the can first!)
